Altitude, density and why they matter

Two numbers on the bag set a coffee’s ceiling before you ever taste it. Most people read straight past them.

Ask a green-coffee buyer what they want to know about a lot they’ve never tasted, and after the country the first word out of their mouth is altitude. The second is density. The two are joined at the hip, and between them they set the ceiling on what a coffee can possibly be — the best it could taste if everyone downstream did their job perfectly. Neither guarantees a good cup. But together, before a single bean is roasted, they tell you how much is even on the table.

01 — The principle

Why altitude matters

It comes down to temperature and time. A coffee tree planted higher up lives in cooler air — and up in the tropical highlands, cool and fairly steady, all year round — and cool air makes the cherry ripen slowly. That slowness is the whole point. The longer a cherry hangs and matures, the more time the seed inside has to lay down sugars and acids and the aromatic precursors a roast later turns into flavour, and the more tightly it packs its cells while doing it. A high-grown bean is, quite literally, denser: more sugar and oil and potential crammed into less space. Down in the warm lowlands the same tree races through the same cycle in a fraction of the time, and the cup shows it — rounder, softer, plainer, quicker to bore you.

Put two trees of one variety on the same volcanic soil — one at 800 metres, one at 1,800 — and they are, for every practical purpose, different coffees. The high one simply had longer to make itself. There is more in it.

02 — The bands

Reading the bands

The ranges in the diagram are the ones buyers carry around in their heads, and they are rough on purpose. Below a thousand metres coffee ripens fast and stays plain. The 1,200–1,500 band is where most of the world’s good washed Colombians and Central Americans live — clean, correct, pleasant. From 1,500 to 1,800 is where the genuinely memorable microlots begin to appear, and past 1,800 you are into rare air: top Geishas, the best Kenyan SL28, the prized lots off the high shoulders of Huíla and the slopes above Boquete. Somewhere north of 2,200 metres you hit the wall — the point where coffee simply won’t fruit reliably — and the volumes shrink to almost nothing.

One honest complication: the numbers slide with latitude. A farm on the equator at 1,200 metres sees very different conditions from one at 1,200 metres down near the Tropic of Capricorn, because the further you get from the equator, the cooler the air at any given height. So the practical specialty band shifts downhill as you move away from the middle of the map. It is why a Brazilian grown at 1,100 metres can drink well above its altitude, and an equatorial coffee at the same height may not — and why comparing raw numbers across continents is a mug’s game.

03 — Density

Density, and the grades on the bag

Density is just altitude’s consequence, cashed out in the bean. Slow maturation makes for tighter cells, busier internal chemistry, and a harder seed — and several origins grade their coffee on exactly this, so the shorthand turns up on labels.

  • SHB — Strictly Hard Bean. Guatemala and Costa Rica. Grown above roughly 1,350 metres, dense enough to be classed as “hard.”
  • SHG — Strictly High Grown. Honduras, El Salvador, Nicaragua. The same idea at a slightly different threshold.
  • EP — European Preparation. Not strictly an altitude grade, but a rigorous hand-screen for defects that tends to travel with high-grown lots.
  • SB / SSB — Soft Bean. The other end: grown under about 1,200 metres, softer and rounder — the grade a specialty bag will never advertise.

On a Central American bag, an SHB or SHG stamp is a real claim; the absence of any altitude at all is a quiet warning. Density matters at the roaster, too — a hard, dense bean takes on heat differently, develops more slowly in the drum, and tolerates a firmer roast without going flat, which is why a good roaster will change their approach between two lots from the same country. In the cup, density tracks with complexity, sweetness and acidity. It does not promise them — a dense bean farmed carelessly is still a bad coffee — but it sets the upper bound on what is even possible.

04 — The ceiling

What the number can’t tell you

For all that, altitude is a ceiling and nothing more. It says nothing about the variety, about how ripe the pickers actually picked, about how carefully the coffee was fermented and dried, how it survived the journey, or what the roaster did with it. A 2,000-metre Caturra stripped green and processed sloppily will lose to a lovingly handled 1,400-metre Bourbon every single time. And it says nothing about the person — a meticulous smallholder at 1,500 metres will beat a rushed industrial estate at 1,900, and both of those things happen constantly.

So read altitude as potential, full stop. A coffee at 1,800 metres has more in it than one at 1,200 — and the rest of the bag, the variety and the process and the roast date and the plain honesty of the label, is what tells you whether the producer actually caught it. High altitude, on its own, is never the answer. Low altitude, unfortunately, usually is.
