How processing changes a coffee
Same farm, same trees, the same picking day. Change what happens to the cherry after it’s picked, and you change the coffee more than the country ever did.

There is a demonstration specialty roasters love, because it never fails to unsettle people. Take one lot of ripe cherries from a single farm, split it three ways, and treat each third differently the moment it comes off the tree. Same soil, same variety, same afternoon. Roast them, cup them side by side a few months later, and a reasonable person would swear they came from three different countries. That gap — identical fruit, three unrecognisable cups — is processing. After the variety of the plant itself, nothing does more to how a coffee tastes.
01 — The idea
What processing actually is
A coffee cherry is a fruit about the size of a small grape, and the part you eventually brew is the seed inside — two of them, usually, flat sides pressed together. Every coffee on earth has to have that seed separated from the skin, the sweet pulp, and the layer of sticky mucilage clinging to it. How a producer does that separation — how much of the fruit stays touching the seed, for how long, and with how much air — is what decides whether the cup comes out clean and tea-like or thick with jam. That is the whole game, and it is played out in the days and weeks between picking and shipping.
It works because fermentation is chemistry, not decoration. While the seed sits inside or beside its fruit, sugars and acids and the by-products of yeasts and bacteria migrate and transform, and some of that ends up locked into the bean. Leave more fruit on for longer, and you get more of it. The three classic routes line up as a neat spectrum of precisely that — how much fruit, how long. A fourth, newer family sits deliberately off to the side.
02 — The two poles
Washed and natural
Washed
In the washed method the cherries are pulped within hours of picking — skin and most of the pulp stripped away by machine — and the seeds, still wearing their coat of mucilage, are held in tanks (in water, or increasingly in their own juices) until fermentation loosens that layer. Then they are rinsed clean and dried. Kenya works this way, most of Colombia works this way, and the finest Ethiopian washeds work this way.
The result is transparency. With the fruit gone so early, what reaches the cup is the seed itself — its variety, its altitude, its patch of ground. Washed coffees are bright and articulate, often tea-like, occasionally almost severe in their cleanliness. If you want to actually taste the difference between two varieties — a Bourbon against a Geisha grown on the same hill — washed is the clean glass you look through. It hides nothing, which is both the appeal and the risk: a dull coffee, processed washed, has nowhere to hide.
Natural
The natural method does almost the opposite, and it is the oldest one there is. Whole cherries are laid out — on patios, or on raised beds that let air move underneath — and dried fruit and all, so the seed ferments slowly inside its own cherry for two, three, sometimes four weeks before the shrivelled husk is milled away. It demands a dry climate, endless raking, and nerve; a natural left too wet or piled too deep turns to vinegar.
Done well, naturals are unmistakable — the fruit was literally still on the seed as it dried, and it shows. Heavier body, deeper sweetness, big berry-and-jam fruit, sometimes a boozy edge that, at the cheap end, tips over into fault. Ethiopia and Brazil are the historic homes, for the same reason: long, reliably dry harvests that let you dry whole fruit without it rotting.
03 — The middle
Honey, the deliberate compromise
Honey processing splits the difference on purpose. The skin is pulped off as in a washed, but some or all of the sticky mucilage is left on the seed to dry in place. That mucilage is golden and tacky, which is where the name comes from — it has nothing to do with the flavour and everything to do with how the beans look drying on the patio. How much you leave is graded by colour, and the more that stays, the slower and shadier the dry, and the more body and sweetness the cup takes on.
- White honey — most of the mucilage scrubbed off; the cup sits closest to a clean washed.
- Yellow honey — some retained, dried in fuller sun; a gentle lift in sweetness and body.
- Red honey — most left on, dried slower and in more shade; noticeably rounder and jammier.
- Black honey — the full coat and the longest, most labour-intensive dry; the closest honey gets to a natural.
Costa Rica’s micro-mills popularised the technique in the 2000s, and Honduras, El Salvador and Brazil ran with it. A honey is where a producer goes when a washed feels too lean for the coffee and a natural too wild — the sweetness of ripe fruit without losing the shape of the seed underneath. It is also more work, and more things that can go wrong, than either pole, which is part of why it costs what it costs.
04 — The frontier
The frontier, and the label
The newest family throws out the old assumption that fermentation should happen in open air. Anaerobic and experimental lots seal the cherries — or the pulped seeds — in oxygen-free tanks or bags, and let them ferment under controlled, often extended, often temperature-managed conditions. The techniques borrow openly from winemaking: carbonic maceration, where whole cherries ferment in a tank flooded with carbon dioxide that softens the fruit from the inside; lactic ferments; co-fermentation with added yeasts or, more controversially, fruit. Colombians lead the category — Diego Bermúdez’s thermal-shock lots, which alternate hot and cold washes between fermentations, are the ones everyone points to — and done well the results taste like nothing in the traditional book: pineapple, rose, lychee, cinnamon, red wine, a finish that goes on and on. Done badly, they taste of solvent, and the honest truth is that plenty of the cheaper ones are done badly.
Which brings you back to the shelf, where all of this is compressed into a single word. Once you know what each route does, a label reads like a weather forecast. Washed says the roaster wants you to taste the variety and the ground it grew in. Natural says expect fruit and weight. Honey says somewhere sweet in between. Anaerobic says brace yourself. None of them is better than the others; they are four different lenses on the same seed, and the most interesting roasters — like the most interesting drinkers — refuse to pick a side.
