Water for coffee
The invisible ingredient that makes up almost all of your cup — why it matters, what's in it, the numbers to aim for, and the easiest way to fix it.

A cup of coffee is about ninety-eight percent water, so the water you brew with is not a background detail — it is most of the drink, and the solvent that pulls every flavour out of the grounds. Hard water, soft water, chlorinated tap water and bottled water each extract coffee differently, and the wrong one can make a superb bean taste flat, chalky or dull no matter how carefully you brew. It is the most overlooked ingredient in coffee, and one of the easiest to fix. This guide explains why water matters, what is actually in it, the numbers worth aiming for, and the simplest ways to get good brewing water at home.
01 — The ingredient
Why water matters
Filter coffee is around ninety-eight percent water and even espresso is roughly ninety percent, so before anything else your coffee tastes of your water. But water does more than fill the cup: it is the solvent that does the extracting, dissolving the flavour out of the grounds, and its mineral content decides how well it does that job. The minerals in it — mostly magnesium and calcium — actively grab onto the flavour compounds in coffee and pull them into the water, which is why they matter so much.
That gives you a Goldilocks problem. Water with almost no minerals, like distilled or heavily filtered water, is a poor solvent and makes weak, hollow, lifeless coffee. Water with too many, like hard tap water, over-buffers the acidity and leaves the cup chalky and dull, while furring up your kettle with limescale. Good brewing water sits in the middle, with enough mineral content to extract well but not so much that it flattens the flavour.

02 — The chemistry
What's in your water
Three numbers describe brewing water. The first is total dissolved solids, or TDS — the overall amount of mineral matter dissolved in it. Too little and the coffee is thin and flat; too much and it turns muddy and heavy. The second is hardness, mostly magnesium and calcium, which is the helpful part that drives extraction and gives the cup its body. The third is alkalinity, sometimes called carbonate hardness or KH, a buffer that neutralises acids: a little keeps the coffee smooth, but too much cancels out the brightness and sweetness and leaves it tasting dull and chalky.
There is one more thing that is not on the chart but matters just as much: chlorine. Most tap water is treated with it, and it tastes and smells unmistakably bad in coffee, so it should always be filtered out. The graphic below shows where the helpful numbers should sit.

In short, you want a moderate TDS, a decent amount of hardness to extract with, and low alkalinity so the coffee's natural acidity still shines through.

The Specialty Coffee Association publishes a target for brewing water, and the good news is that you do not have to hit it precisely — you just want to be roughly in the zone. A middling mineral content, a good level of hardness and low alkalinity will make almost any coffee taste like itself.
If you remember only one thing, remember chlorine: removing it is the single biggest improvement most people can make. After that, aim for medium hardness and low alkalinity, and do not chase the exact numbers unless you are brewing competitively.

04 — In practice
What to use at home
You have three easy routes to good water, in rough order of cost. A simple carbon filter — a jug filter, or one that fits your tap — removes chlorine and softens hard water a little, and it is the cheapest worthwhile upgrade for most tap water. Bottled water works too: look for a low-to-medium mineral water, roughly fifty to a hundred and fifty milligrams per litre on the label, and steer clear of the very hard "mineral" waters. And for anyone with extreme tap water, or an espresso machine to protect from scale, the precise option is to start from distilled or reverse-osmosis water and add a measured mineral formula, which lets you hit the target exactly.

Fixing a cup that's not working
If your coffee is consistently off in the same way no matter the beans or the brew, suspect the water. A flat, hollow cup usually means water that is too soft or too pure, so try water with a little more mineral content. A chalky, dull cup points to water that is too hard or too alkaline, so filter it or switch to something softer. A faint chemical edge is almost always chlorine from the tap, which a carbon filter removes in seconds. The table below sums it up.

You cannot taste your beans through bad water. Filter out the chlorine, aim for medium-soft water, and a good coffee finally tastes like itself — brighter, sweeter and cleaner, with nothing changed but what came out of the tap. Give the freshly roasted single origins below the water they deserve.
