Cañas Verdes
Volcanic soils, cloud forest, and one of the highest concentrations of competition-grade Geisha plantings in Panama. The Cañas Verdes estate sits on the western slope of the Volcán Barú, in the highland farming village of Boquete — coffee country since the 1890s, Geisha country since 2004.
The place
Boquete is a single-road mountain town three hours from David, the regional capital. It runs along the Caldera River from a chilly 1,200 metres up to nearly 2,000 — a vertical microclimate compressed into ten miles. The mornings are wrapped in cloud, the afternoons drop into long shafts of equatorial sun, and the volcanic soil retains heat and water like nothing else in Central America. Coffee thrives.
The varietal
Geisha (sometimes spelled Gesha) is the varietal that put Panama on the modern specialty map. It originated in Ethiopia in the 1930s, was imported to Panama via Costa Rica, and was largely forgotten until the Hacienda La Esmeralda lot won the 2004 Best of Panama competition by a record margin and sold for then-unheard-of prices. Cañas Verdes was one of the first estates to follow Esmeralda's lead, planting Geisha on its highest, coolest plots.
What makes Geisha unusual is its aromatic profile — bergamot, jasmine, white peach, occasionally pomelo or lychee — at intensities that resemble a fine tea more than a typical coffee. It's also lower-yielding and more disease-prone than commercial varieties, which is why a Geisha bag sells for two to four times the price of an excellent washed Caturra.
How the lot is processed
Our current lot is fully washed: cherries are de-pulped within twelve hours of picking, fermented for 24–36 hours in concrete tanks, washed thoroughly, then sun-dried on raised African beds for 14–18 days, depending on the weather. The aim is the cleanest possible expression of the varietal — no defect tolerated, no fermentation flavours, just the Geisha profile pulled forward.
